NEW Food Establishment Letter Grading System is NOW in Effect!
On January 1, 2016, the Paris-Lamar County Health District will begin the transition of issuing and requiring food establishments to post A, B or C grade cards reflecting their performance on sanitary inspections. Grade postings will provide diners with easily interpretable information regarding food safety practices. The grading program’s inspection system is designed to promote improvement in food establishment’s overall food safety practices. A food establishment’s score will depend on how well it follows County and State food safety requirements. Inspector’s check for food handling, food temperature, personal hygiene, facility and equipment maintenance and vermin control. Each violation earns a certain number of points. At the end of the inspection, the inspector totals the points and this number is the restaurants inspection score.
The points for a particular violation depend on the health risk it poses to the public. Violations fall into 3 separate categories:
Public Health Hazard- example, failing to keep food at the right temperature
Critical Violation-example, serving raw food such as salad without properly washing it first
General Violation-example, not properly sanitizing cooking utensils
A food establishment will have 2 chances to earn an A in every inspection cycle. If it does not earn an A on the first inspection, it is scored but ungraded. An inspector will go back to the establishment unannounced, typically within a month, to inspect it again and the re-inspection is graded. Food establishments will be required to post signs visible to the public upon entering facility. Fines will be issued to establishments who do not properly post grades. If the Paris-Lamar County Health District receives a complaint and the violation constitutes a Public Health Hazard the previously issued grade may be temporarily changed until a secondary inspection is conducted to ensure violation is resolved. If issue is resolved upon second inspection the initial grade may be reinstated. A food establishment’s grade and violation information will be available for the public to view.

Paris-Lamar County Health District
The mission of the Paris-Lamar County Health District is to provide the best possible opportunity for good health to the citizens of Lamar County through health promotion and the prevention of disease.
Public health services for the City of Paris and Lamar County are provided by this department. Funding is derived from the City of Paris and Lamar County as well as through grants from the Texas Department of State Health Services. As a public health department most services are primarily preventive medical treatment. Services provided include pre-natal care, family planning, immunizations, care of non-emergency medical problems, screening and treatment of sexually transmitted diseases, Women, Infant and Children (WIC) nutrition program and sanitary inspections.
The staff includes a medical director, nurse practitioner, nurses, and clerical staff capable of delivering care, answering patient questions, and maintaining office service. In the event of an emergency, patients are referred to Paris Regional Medical Center emergency room.
Appointments are scheduled after patients have completed Medical History forms and the Health Care Assistance Application. These forms are located in the Info Center under Patient Forms. Immunizations do not require appointments.
Fees are determined by the local health board. Services of the Paris-Lamar County Health District are provided regardless of ability to pay, however, payment is expected when services are rendered unless prior arrangements have been made. Programs are available for low income families for reduced fees or no fees. Applicants qualify on an individual basis for one year. Applications must be renewed annually.
